NS FERM Alcomeno

Non-Saccharomyces yeasts for the production of wines respecting acid balances

NS FERM Alcomeno is a non-Saccharomyces yeast strain resulting from a research programme on microbial ecology. The selection, carried out on different terroirs in Burgundy, was done in collaboration with the Université de la Vigne et du Vin (UVV) in Dijon.

NS FERM Alcomeno, depending on its genetic characteristics, reduces the conversion from sugar into alcohol, and makes it possible to obtain wines with a lower alcohol content of up to 2.5% Alc./Vol.

NS FERM Alcomeno is able to rapidly compete with native yeasts by inhibiting the undesired indigenous flora. This results in wines with very low volatile acidity.

NS FERM Alcomeno is also responsible for deacitification of the medium (reduction of acetic acid), making it ideal for producing wines with low SO2 or even sulphur-free wines.

NS FERM Alcomeno is ideal for very fresh and fragrant rosés and whites. Furthermore NS FERM Alcomeno is the best choice for the production of rosé wines from bleeding must of red grapes.
