When the content of organic acids is high, it is necessary to resort to the correction of the acidity. The substances authorized for the chemical disacidification are: potassium bicarbonate (KHCO3), neutral potassium tartrate (K2T) and calcium carbonate (CaCO3). These compounds give origin to scarcely soluble salts, which tend to precipitate.
