CHITOCEL PRO
Protonated chitosan-based adsorbent adjuvant
CHITOCEL PRO is a product based on chitosan, a natural polysaccharide of fungal origin (Aspergillus niger) that helps to reduce and, in some cases, eliminate unwanted microbial contamination in wine; it is effective against acetic and lactic acid bacteria, yeasts in general and Brettanomyces. It is widely used in wines aged in wood; the porosity of this material provides an ideal environment for the development and growth of microorganisms, particularly Brettanomyces.
Thanks to its antimicrobial action, CHITOCEL PRO is an excellent alternative to SO2 and enables the production of wines that are microbiologically stable and in line with market demands, which in recent years have favoured products with increasingly lower sulphite levels.
