ENZYMATIC DETERGENTS FOR THE CLEANING OF WINEMAKING FACILITIES

The importance of acting on the development of biofilms, i.e. the initial phase of adhesion of promoter micro-organisms to surfaces, has led to important innovations in the prevention of infection. Today we know that adhesion is favoured by the presence of organic and inorganic residues: in particular, the presence of calcium ions is fundamental for the microbial structures responsible for anchoring to the surfaces. In addition, stubborn organic residues in fermenters or on cellar surfaces represent a further risk of contamination.

 

With our enzyme-based powder detergent, REMOVIL EPS, you can dissolve and remove the protective biofilm consisting of layers of hexopolysaccharides (EPS), thereby drastically reducing the number of harmful microorganisms.  REMOVIL Zyme is also available as an alkaline enzymatic detergent for the cleaning of closed systems and equipment in the food industry and especially in wineries and breweries.
