Proteolytic enzyme for beer stabilization

 

Papaynase NA stabilizes beer against protein precipitation: it partially breaks down the proteinaceous substances and micro-polypeptides responsible for the colloidal clouding of beer up to the peptonic phase. It is used during maturation or in filtered beer.
