MALOLACT X

A blend of Oenococcus and Lactobacillus to impart complexity, depth and body to wines

An important factor in MLF is the choice of microorganism, between Oenococcus oeni or Lactobacillus plantarum, combined with genetic diversity within the same species.

We have seen, however, that on many occasions, due to the difficulty of establishing Lactobacillus plantarum, a second inoculation with Oenococcus oeni has been necessary, and the wines produced through malolactic fermentation using both microorganisms have yielded greater aromatic and flavor complexity.

This is where MALOLACT X comes in, the new frontier in MLF: a blend of microorganisms that imparts complexity, breadth and body to wines.

MALOLACT X simplifies the malolactic fermentation process: when used correctly, the first phase of MLF (approximately 60–70%) will take place in the must, with the remainder occurring in the wine.  It is ideal for both sparkling wine bases and fine red wines.
