    Introduction to sparkling wine vinification

    This session will clarify the vinification steps for traditional and Charmat methods; and our quality management.

    Press Management

    The second session will show how to use AEB strategies on different juice cuts, depending on the type of press and program.

    Acid Management

    In the last appointment we will analyze our solutions to preserve or modulate the acidity, from the vineyard to the cellar.
