Hard seltzer is a fizzy, slightly alcoholic, fruit-flavoured drink with low alcohol content. It is extremely easy to drink and offers an intriguing bouquet of aromas and flavours.
Although it is possible to produce simply by blending water and alcohol, blending water and alcohol, production through fermentation allows breweries to offer a premium, unique product, with an ABV value similar to beer but with a lower amount of calories and carbohydrates.
Starting with a simple sugar such as sucrose (cane sugar) or dextrose, nutrients and yeasts are added to obtain a simple hydroalcoholic base, which is then promptly clarified, added with aromas and extracts and subsequently carbonated.
After years of industry experience and extensive experimentations and field trials, we offer the best biotechnology to allow you to create a beverage with a clean seltzer base, clarified and neutral in flavour.
Fermoplus Integrateur 20 KD provides your seltzer wort with the correct amount of assimilable nitrogen, aminoacids and vitamins, thus allowing a rapid fermentation process.
Fermol Charmat, widely used in the production of sparkling wines in the winemaking industry, allows rapid and reliable fermentations of both low- and high-gravity seltzers at temperatures of 18-26°C, still maintaining an overall neutral sensory profile.
Arabinol Arôme is a blend of selected arabic gums that can enhance the sensory profile of seltzers, increasing perceived mouthfeel and sweetness without adding calories and improving bubble stability.
Danmil Carbon filtration pads can easily be applied to have clear, odourless Seltzer bases. Filtration through Danmil Carbon not only removes fermentation-related hazes, but also the yellow tones and any yeast-derived aromas in the fermented beverage. The higher efficiency compared to regular activated carbon is explained by a more efficient liquid-carbon contact.
Brew Free PES and Brew Free PP are the essential cartridges to achieve the microbial purity for your seltzer base, so that it can afterwards be added with aromas, carbonated, and bottled.
Quickgel AF forms a very compact “net” of flocculants, which ultimately gives the wines brightness, andmakes it easier to filter.
The sediment left at the bottom of the tank will be very compact, making for easy and clean racking.
Filtration can be carried out 48 hours after addition without any problems in filtration flow rates.
