A zinc enhanced nutrient blend, formulated to promote yeast cell growth, viability and fermentation, it is useful in helping yeasts increase uptake of maltose and maltotriose, and so reduce residual maltotriose in the final product.
As such it removes the fermentation inefficiencies and product inconsistencies residual maltotriose and slower fermentations cause. It is particularly recommended for high adjunct brews, high gravity brewing, or where poor or inconsistent malt quality is a potential concern. It also assists with slow and stuck fermentations, and poor yeast sedimentation.
Malt wort provides yeast with all its mineral nutrients, with the possible exception of zinc, and some of the zinc that is present may be removed as insoluble precipitates during the copper boil. Brewers therefore take care to ensure that their yeast is provided with an extra and sufficient source of zinc to ensure yeast health and metabolism.
