Carbosil is a clarifying polycompound based on clarifiers, silica sol, decolorizing carbon and activated bentonite.
Carbosil clarifies and perfectly decolorizes white grape musts, muted musts, concentrated musts, wines during the final fermentation stage.
The special preparation in the form of a liquid suspension displays a faster action with regard to traditional powder products with a clarifying-decolorizing action, it is ready-to-use, can be added by means of dosing pumps facilitating operators’ work and allows to easily carry out comparative trials to establish the effectiveness of the treatment.
Carbosil has to be used in association with gelatins enabling a rapid flocculation: in order to obtain the most effective decolorizing action, it is suitable to add gelatin after pumping over the must treated with Carbosil for a few hours.
The utilization of Carbosil is indispensable for musts deriving from overripe grapes or with a marked presence of coloring molecules with too intense yellow hues.
In finished wines, Carbosil is successfully used to eliminate yellow tonalities thanks to its specific action towards catechins and proanthocyanidins, that cause oxidation and instability. When treating the musts of Pinot Gris or Pinot Noir it removes respectively the excessive copper and rosé hues.
