Fermol Mediterranée is a strain selected for the production of warm and full bodied wines, suitable for aging, but already very pleasant at the end of fermentation.
This yeast has a short latency period, constantly and firmly conducts the transformation process, well resisting to high temperatures and to high alcoholic degrees. It has a high alcoholic power, does not produce hydrogen sulphide, has a very good resistance to sulphur dioxide.
Fermol Mediterranée produces a high quantity of polysaccharides and mannoproteins facilitating the quick stabilization of color and tannic structure, they confer softness and roundness to wine, preserving the positive aromatic, gustative and olfactory aspects developing during fermentation. Mannoproteins firmly combine with some astringent tannic polymers canceling their effect and lower redox potential that may negative affect the finest aromatic notes.
Fermol Mediterranée highlights varietal complexity and amplifies with balance sweet notes, reminiscent of jams of ripe figs and red berries, such as red currant and cherry.
